Mom, we aren't sure if she has to be gluten free too...which opens another can of worms, and Jessica, she isn't sure if all dairy is off limits or just the cheese. She's meeting with her doctor this week and a nutritionist next week to hopefully get some answers. Here's the challenging part of the "sweet" stuff...she cannot have any sweeteners, artificial or natural, even honey and molasses are off limits. Poor girl. Meat and veggies.<br /><br />But is sounds like the Spanish Rice will work, she'll just have the stew the tomatoes at the same time. And the Quinoa salad is a great idea. I am going to make an Italian version and a Mexican version. Same idea, just different stuff in it. One will have basil, one cilantro, one with black beans, one with garbanzo beans. Should be fun dishes. <br /><br />I am going to make a cookbook for her of some of the things we eat that I know she can eat. She and Justin are both very much recipe followers and not too adventurous beyond the rules so having something written down will help them. I think I sent that recipe, if not let me know.<br /><br />Sweet: dried apricot dipped 1/2 way in dark chocolate on your pretty holiday plate. You could also dip a commercial ginger snap cookie in chocolate and alternate with the apricot on you plate.<br /><br />You are a good friend to take on this challenge. I will be anxious to see what else you get for ideas.
